what dingus said.  go for 2 GB ram if you can afford it, never hurts.  be
sure you have firewire.  although not very common on lappies, dedicated
video cards would be better than the typical shared video memmory. 
ideally, the HD would be 7200 rpm (although i fear that 5200 is still the
norm).

does it really, really *need* to be a laptop?  are you booked for a live
set?  for the same $$$, you'll get something faster, quieter, more flexible
and upgradable.  plus, you can totally geek out and build your own for the
perfect specs - it's really not very hard, all the pieces snap together.

Anything running a dual processor with a gig of ram should suffice. Would
recommend m-audio souncards for reliability and sound.
